Hagalkayi Palya is a side dish prepared using Bitter Gourd. It is a dry side dish and goes will when served with Indian Bread or Rice and Saaru.

Ingredients:
¼ Kg Bitter Gourd
1 Big Lemon Size Tamarind, soak in water
1 medium Orange size Jaggery
½ Cup Grated fresh Coconut
4 – 5 tsp Rasam Powder
1/4 tsp Turmeric Powder
Coriander leaves, chopped for garnishing
Salt to taste,
For the seasoning:
1tbsp Oil
1 –2 Byadagi Red Chili, Broken
1tsp Mustard Seeds
1tsp Urad Dal
Few Curry Leaves
Method:
Cut Bitter Gourd into small pieces. Boil the pieces in water until they become soft. Drain the water. Prepare Tamarind pulp.
Heat Oil in a kadai, add Mustard Seeds and Urad Dal, when the Dal turns pink and the Mustard seeds start to splutter, add Chilies, Turmeric Powder and Curry leaves.
Add Tamarind pulp, Jaggery, Salt and Turmeric powder and cook until the moisture evaporates. Add Coconut and Rasam Powder and stir-fry until it is completely dry.
Now, add Bitter Gourd pieces, Salt and stir.
Remove to a serving dish and serve Hagalkayi Palya with Rice or Phulka.
