Onam Sadya in Kerala comprises of all the possible tastes and textures. Puli Inji is a dish that adds a dash of sweet and sour to the platter. This dish is prepared using Ginger (Inji) and Puli (Tamarind).

Ingredients:
2 inches Ginger, Peeled and chopped finely
1 Lemon sized Tamarind soaked in water
1/2 Cup Grated Jaggery
2 tbsp Oil
1/2 tsp Mustard Seeds
1/2 tsp Turmeric Powder
1 tsp Chili Powder
2 Green Chilies, Slit
Few Curry leaves
Salt to taste
Method:
Squeeze the Tamarind and sieve the water.
Heat Oil in a pan and add Mustard Seeds, when they splutter, add Curry leaves, Green Chilies, and Ginger. Stir-fry for a minute.
Add Tamarind water and Jaggery and simmer. Add a cup of water if it is too thick.
Add Chili powder and salt and stir.
When the consistency is a little thick, like sauce, remove to a serving dish.
Serve hot with plain rice.
