A side dish prepared using sprouted beans. It is a delicious and nutritious dish with gravy.

Time Required: 25 Minutes + Soaking time
Ingredients:
2 Cups Sprouted Matki / Moth bean / Turkish gram or moong
1 big Onion, chopped finely
1 big Tomato, chopped finely
2 – 4 Green Chilies, slit
2tsp Jeera / Jeera Powder
2tsp Coriander Powder
2 sprigs Coriander leaves, chopped finely
1tsp Aamchur / Dried Mango Powder or Lemon Juice
1tbsp Oil
1tsp Mustard seeds
½ tsp Turmeric Powder
1tsp Chili Powder
1tsp Sugar
Salt to taste
Method:
Cook Matki in cooker. Heat Oil add Mustard Seeds and when they splutter add Turmeric Powder, Green Chilies, Onion and sauté for a minute. Add Tomato and continue to sauté for 2 minutes, add Chili Powder, Jeera Powder, Coriander Powder and Dried Mango Powder mix well. Add Salt, cooked Matki with the water, Sugar and mix well. Remove to a serving dish and garnish with Coriander leaves. Serve hot Kaalina Palya with Roti, Paratha, Bhakri or Pulav.
