A side dish prepared using Potatoes and Pointed gourd.
Time Required: 25 Minutes
Ingredients:
2 Potatoes / Alu, Peeled and Diced
4 Parwal / Pointed Gourd
2 Tomatoes
1 tsp Black Pepper Powder
½ tsp Chili Powder
½ tsp Aamchur / Dry Mango Powder
½ tsp Coriander Powder
½ tsp Jeera / Cumin Powder
½ tsp Turmeric Powder
¼ tsp Hing / Asafoetida
2 – 3 tbsp Oil
1tsp Mustard Seeds
1tsp Jeera / Cumin Seeds
Method:
Chop Parwal and Alu into long strips. Deseed Tomatoes and chop into long strips. Heat Oil, add Mustard and Jeera. When they splutter, add Turmeric and Hing. Add Alu and Parwal and mix well. Add Salt. Close the vessel and cook for 5 minutes or until the Alu is soft. Keep stirring every 2 minutes.
Add all the other powders and mix well. Add Tomatoes and cook for another minute. Remove to a serving dish and serve hot with your choice of Indian Bread.
