Peanut Stuffed Chilies also known as Shenga Mirchi is prepared by stuffing spiced and ground groundnuts into Chilies and shallow frying.

Ingredients:
8 Shima Mirchi or choose Chilies, which are mild
1/2 Cup Roasted and peeled Peanuts
1/2 Cup Besan / Gram Flour
1 tsp Jeera / Cumin Seeds
1 tsp Ajwain / Bishop’s weed
1 or 2 tsp Red Chili Powder
1 Medium sized Onion, Chopped
6 tbsp Oil
Salt to taste
Method:
Crush Peanuts and keep it aside. Crush Ajwain and Jeera. Mix Ajwain – Jeera powder, Chili Powder, Salt, and Besan and keep it aside. Heat a tsp of Oil and saute Onions. Grind to a paste and keep it aside.
Wash and dry the Chilies. Slit them. Mix Peanuts, Besan mixture, and Onions.
Stuff this mixture into the Chilies. Heat the rest of the Oil in a pan and arrange the stuffed chilies and shallow fry till done.
Remove to a serving dish and serve with your choice of Indian Bread.
