Ratatouille

Reading the title, the first image that comes to your mind is Remy the cute mouse in the movie Ratatouille in a chef gear!

Cuisine: French

Time Required: 25 Minutes

Ingredients:
1 Green, 1 Yellow Zucchini or 1 tender Cucumber
1 Red Pepper
1 Yellow Pepper
1 Green Pepper
1 Onion
4 Cloves Garlic
2 Eggplant / Aubergine / Brinjal
6 Tomatoes
Few Olives
Few sprigs of fresh Parsley and Basil
1 tbsp Herb mix
4 tbsp Oil
Pepper and Salt to taste

Method:
Blanch the Tomatoes and remove the skin.

Chop the tomatoes roughly.

Chop Zucchini / Cucumber, Brinjal, Onion, and Peppers into big pieces. Slice Garlic into two pieces.

Heat 1tbsp Oil and add Onion and Garlic and sauté for two minutes. Remove and keep aside.

Heat another tbsp. of Oil and add Eggplant and sauté for two minutes or until cooked. Remove and keep aside.

Heat the remaining Oil and add Zucchini / Cucumber and sauté for a minute.

Add the Pepper and sauté for a minute or two. Add ½ Cup Water, Tomatoes, Olives, Onion-Garlic, Brinjal and mix well. Add Pepper and Salt, dry and fresh Herbs and mix well.

Remove to a serving dish and serve hot with toast.

This dish tastes good with Indian bread too. Do you agree, Remy?
