Sweet and sour crispy pumpkin squares is a healthy and tasty side dish. Serve it with Rice and Dal or with your choice of Indian Bread.

Ingredients:
500 gms Red Pumpkin
1/4 Cup Meethi Chutney / Tamarind and Dates or Jaggery Chutney
Juice of half Lemon
½ tsp Garam Masala
½ tsp Red Chili Powder
1 tsp Shahi Jeera / Small Cumin Seeds
1 tsp Anardana / Pomegranate seeds powder
4 tbsp Oil
1″ Ginger, Minced
A pinch Hing / Asafoetida
½ tsp Kala Namak / Black salt
A sprig of Curry leaves
½ cup curd
Salt to taste
Method:
Peel and cut Pumpkin into big square pieces. Prick pieces slightly with a fork.
Apply lime juice and black salt on them, keep them aside for 10 minutes.
Heat 2tbsp Oil on a flat tava / Pan and shallow fry the pieces until brown on all sides. Remove and keep them aside.
Heat 2tbsp Oil and add Curry Leaves, Jeera, Meethi Chutney, Ginger, Red Chili Powder, Anardana, Garam Masala, Salt, and Hing.
Add Curds and cook for 5 minutes.
Add Pumpkin and let it come to a boil.
Remove from heat when the gravy thickens.
Serve hot Sweet and Sour Pumpkin Squares with your choice of Indian Bread.
