Sweet pumpkin dish from Karnataka. The name of the dish means a relationship with Sweet Pumpkin.
Time Required: 20 Minutes
Ingredients:
1 Cup Sweet Pumpkin pieces without the skin
½ Cup Coconut
3 – 4 Red or Green chilies
2 tsp Uddinabele / Urad dal / Black gram split
1 tbsp Tamarind pulp
1 Lemon size Jaggery grated
1 tsp Roasted Sesame Seeds
A pinch of Ingu / Hing / Asafoetida
1 tsp Oil
Salt to taste
For Seasoning:
2 tsp Oil
1/2 tsp Mustard Seeds
1 Red Chili, Broken
A pinch of Turmeric Powder
Few Curry Leaves
Method:
Boil Sweet Pumpkin with very little water. Fry Uddinabele, Red Chilies in Oil. Grind Coconut, Urad Dal, Chilies, Sesame Seeds, Tamarind pulp, Salt and Hing to a paste. Add this to the Sweet Pumpkin and mix well. Add Jaggery and let it boil for a minute. If the dish is too thick, add half cup of water.
Heat Oil and add Mustard Seeds, when they splutter, add Red Chili, Turmeric Powder and curry leaves. Pour this on the Sweet pumpkin and mix well. Serve with Rice or Chapathi.
Instead of Sweet Pumpkin, Cucumber, Ridge Gourd, Bottle Gourd can be used.
