Vegetable Au Gratin is a casserole prepared using vegetables in a cheesy sauce.

Ingredients:
1 Potato
2 Carrots
1 Cup Shelled Peas
10 French Beans
Few Cauliflower Florets
Few Broccoli Florets
For the white sauce:
1 Cup Milk
4 Pods Garlic
2tbsp Refined Flour/Maida
2tbsp Butter
1/2 Cup Cheddar Cheese
1/2 tsp Pepper or Chili Flakes
1/4 Cup Cheese
Salt to taste
Method:
Peel Potatoes and Carrots and dice them, string the Beans and chop into 1 Cm long pieces. Steam the vegetables and keep it aside.
For the sauce:
Heat Butter in a pan and add the Garlic and saute for a minute.
Mix Flour in two tablespoons of cold milk and keep it aside. Add the remaining Milk to the pan and cook for a minute.
Add the flour mixture and stir continuously to avoid lumps for 2 minutes. Add Cheese, Pepper and Salt.
Mix well. Add the steamed vegetables and remove to a oven proof dish.
Spread the remaining cheese on top of the dish.
Bake in a preheated oven for 5 to 8 minutes or until the cheese melts.
Serving Suggestion:
Serve Vegetable Au Gratin with Garlic Bread, Chili toast, Potato Wafers, Pasta and Salad.
