Assorted vegetables cooked with Tomato and Tomato ketchup.

Serves: 4
Ingredients:
1 Cup Potatoes, Diced
1 Cup String Beans, Chopped finely
1 Cup Carrots, Chopped finely
½ Cup Shelled Peas
1 Cup Cauliflower florets
1 Onion, Chopped finely
2 Tomatoes, Chopped finely
1tbsp Ginger Juliennes
4 Green Chilies, Slit
1tsp Chili Powder
1tsp Sugar
2tbsp Tomato Ketchup
1tbsp Oil
Salt to taste
Method:
Steam the vegetable and peas. Heat Oil add Onion, Ginger and Green Chilies and sauté for a minute. Add Tomatoes and again sauté for a minute. Add Chili Powder, Sugar, Salt and Tomato Ketchup and mix well. Add the Vegetables and a cup of water and simmer for a minute and serve with Rice or Indian Bread of your choice.
