Vrat ke Aloo Subzi is a tasty potato gravy dish prepared during festivals like Navratri, Shivratri, Ekadashi, Pradosh and so on. Basically prepared whenever people need to eat Satvik food and pray.
Ingredients:
5 Potatoes, boiled
1 cup Tomato Puree
1 tsp Coarsely ground Coriander Seeds
2 tbsp Oil
1 tsp Jeera
1 tsp Ginger paste
1 tsp Garam Masala
A pinch of Hing/Asafoetida
1/4 tsp Turmeric Powder
1 tsp Aamchoor/Dry Mango Powder
1 tsp Chili Powder
Sendha Namak/Rock Salt to taste
Few sprigs of Coriander leaves chopped for garnishing
2 tsp crushed Kasoori Methi/dry Fenugreek leaves (Optional)
Method:
Mash Potatoes and keep aside.
Heat Oil and add Jeera, Hing, Turmeric powder, Ginger, Aamchoor, Chili Powder and stir.
Add Tomatoes and cook for 5 minutes stirring continuously. Add Potatoes, one cup of water and Salt. Cook for 5 minutes.
Add Kassori Methi and stir for a minute. Remove to a serving dish and garnish with Coriander leaves.
Serve hot with Kuttu ki Poori.
