Healthy soup and perfect while on diet.
Time Required: 5 minutes + Chilling time
Ingredients:
1 Cucumber
1/2 Cup Mint Leaves
3 Spring Onions or 1 Onion
Lemon Juice to taste
Salt and Pepper to taste
Method:
Peel and chop the Cucumber, reserving a few slices for garnishing. Liquidise Cucumber, Spring Onions and the remaining ingredients. Add cold water if required. Add Salt and Pepper to taste.
Garnish with Cucumber slices and chill Cool Cucumber Mint Soup before serving.
