A soup that you can sip throughout the day.
Time Required: 10 Minutes + Chilling time
Serves: 2
Ingredients:
1 Cucumber, Slices
1 Onion, Sliced
1/2 Cup Mint Leaves, Chopped
2 cloves Garlic, Crushed
Water as required
1tbsp Butter or Oil
Salt to taste
Method:
Heat Butter in a pan and saute Onions and Garlic.
Add Cucumber slices and Mint leaves.
Saute for 2 minutes and add water.
Bring it to a boil and simmer for 5 minutes. Remove from heat. When cool, puree the mixture and strain.
Serve chilled Hot Cucumber and Mint Soup garnished with mint leaves.
