Fajita is a grilled tortilla stuffed with condiments like lettuce, sour cream, guacamole, salsa, pico de gallo, cheese, and tomato.

Ingredients:
2 Tortilla wraps
1/2 Cup Sweet Corn Kernels, Boiled
1/4 Cup Zucchini, Chopped
1 tbsp Coriander leaves, Chopped
Few leaves Lettuce
1 Tomato, Seeds removed and chopped
2 Cubes Processed Cheese, Grated
2tbsp Sour Cream or hung Curds
2 tbsp Mint Mayonnaise
1 tsp Sugar
1 small Onion, Chopped finely
1/4 Cup Cooked Beans
1/2 tsp Ground Cumin
2 Pods Garlic, Minced
1 or 2 Chilies, Chopped finely
1/2 Cup Salsa
1/2 Chopped Yellow and Red Pepper
1 tbsp Oil
Salt and Pepper to taste
Method:
Heat Oil, add Garlic, Onion and saute for a minute. Add Chilies and Zucchini and toss.
Add Tomatoes, Red and Yellow Pepper, Beans, Corn, Salt and Pepper, Cumin, and Sugar. Cook for a minute and remove to bowl and keep aside.
On a Tortilla wrap, spread Mint Mayonnaise. On one side spread the vegetable mixture.
Sprinkle some cheese.
Close the wrap.
Grill for 2 to 3 minutes.
Cut the Fajita and serve with Salsa, Lettuce, Sour Cream, and Tortilla Chips.
