After the Jackfruit season, if you have collected the seeds, you can make this crispy and tasty vadas / fritters for a rainy evening with hot filter coffee.
Ingredients:
1 Cup Jackfruit seeds, peeled and cooked
1 Cup Rice flour
2 Onions, chopped finely
4 to 5 Green Chilies, minced
1″ Ginger, minced
2 tsp Chili Powder
1 tsp Pepper Powder
Few sprigs of Coriander leaves chopped
Few Curry leaves, chopped finely
1 tsp Om kalu / Ajwain / Bishop’s seed
Oil for deep frying
Salt to taste
Method:
Boil the seeds until they turn soft and peel them.
Mix everything except for Oil used for deep-frying using little water to a tight dough.
Divide into lemon sized balls.
Heat Oil in a kadai for deep-frying the Jackfruit Seeds Vada. Grease an Aluminum foil or on a plastic sheet or a plantain leaf and keep a ball over it and press with your fingers to a thin concentric circle.
Remove gently and deep fry on both sides until golden brown.
Serve hot Jackfruit Seeds Vada with chutney.
This snack is best eaten on a rainy monsoon evening sipping either hot filter coffee or masala tea.
Store the Vadas in airtight containers.
