My cook who is from Orissa cooked this delicious Baingan and Paneer Tikki for a dinner party at home. Usually except for the Paneer (Cottage Cheese), the rest of the ingredients are used to prepare an Oriyan dish called, Choka.

Ingredients:
2 Potatoes, Boiled and Peeled
1 Brinjal (Egg Plant), Roasted and Peeled
Few slices of Paneer (Cottage Cheese)
1tsp Red Chili Powder
2 Green Chilies, Chopped finely
1tsp Chaat Masala Powder
Few Sprigs Coriander leaves, Chopped finely
Juice of half Lemon
Oil for shallow frying
Salt to taste
Method:
Sprinkle Salt and Chili Powder on the Paneer slices and keep it aside. Mash Potatoes, Brinjal and remove to a mixing bowl. Add Green Chilies, Ginger, Coriander leaves, Lemon Juice, Red Chili Powder, and Salt and mix well.
Coat each Paneer slice with the Brinjal mixture and keep it aside.
Shallow fry on both sides until brown.
Remove to a serving dish and serve hot Baingan and Paneer Tikki with salad.
