Crispy Calocassia

This is a shallow fried snack using Calocassia tuber.  This dish is also known as Podi in coastal regions of Karnataka.

Time Required: 25 Minutes
Serves: 2

Ingredients:
6 – 8 Calocassia / Arbi / Kesuvina Gedde
Oil for shallow frying
Salt and Chili Powder for taste

Method:
Boil Calocassia tubers. Peel them. Slice them into thin wafers. Heat a pan and grease it with Oil, arrange the slices on them and shallow fry on both sides till crisp and light brown. Remove to a tray and sprinkle Salt and Chili powder. Serve hot with piping hot tea.
