Last weekend I was in Mangalore and enjoyed Podi with my friends. Podi is a crispy and tasty snack, which is very popular in this coastal region.
Time Required: 30 Minutes + Soaking time
Ingredients:
1 Udupi Gulla / Brinjal / Egg Plant or Raw Banana or Potatoes
Oil for shallow frying
For the masala:
1 Cup Coconut
10 – 12 Red Chilies
2tbsp Coriander Leaves
1tbsp Jeera / Cumin Seeds
1/2 tsp Methi / Fenugreek seeds
1 Cup Soaked Rice
1/2 Cup Tamarind pulp
1tsp Jaggery
Salt to taste
Method:
Chop Brinjal and Potatoes into roundels and the Raw Banana into 2 inch by 2 mm rectangular slices. Drown the vegetable slices in water.
Grind the ingredients for the masala to a paste. Apply a coat of this masala on both sides of the vegetable.
Heat a flat tava / pan and sprinkle some Oil. Arrange the masala coated vegetable on the Tava and shallow fry until done.
Serve hot with hot plain Rice, Ghee, and Tomato Saaru.
