Puttu is a dish from Kerala, South India. Rice flour and Coconut layers are steamed in a Puttu maker called as Puttu Kutti.
Time Required: 15 Minutes
Ingredients:
2 Cups Rice
1 Cup Grated Coconut
1tsp Sugar
½ tsp Crushed Jeera / Cumin Seeds
Salt to taste
Method:
Soak Rice for two hours and spread on a cloth and dry in shade. Grind to a fine powder. Instead of making the flour at home, instant Puttu mix is avaiailable in the market, which is equally good. Buy either white rice flour or red rice flour. Red rice flour is tastier than the white rice flour.
In a mixing bowl add the flour, Salt and add water little by little until the flour is just wet and powderey not batter consistency. To check whether enough water is added, take a fistful of the flour and squeeze it. It should remain as a lump.
Add Sugar and Jeera to the Coconut and mix well and keep aside.
In the puttu maker add enough water in the lower container and in the cylindrical pipe add 2tbsp of Coconut and over that layer with ½ Cup of Puttu mixture and over it Coconut… continue until you reach the top the cylinder. Close it and fix it over the lower container and steam for 4 to 5 minutes.
Remove in trays retaining the cylindrical shape. Serve with Kerala Banana and Kadala Curry.
