Vegetable Chow mein is a Chinese dish. In this, the noodles are prepared separately and tossed with assorted ingredients.
Time Required: 40 Minutes
Ingredients:
1 Packet Noodles
1” Ginger, Juliennes
6 Garlic Pods, Chopped finely
3 Spring Onion, Scallions chopped finely
1 Onion, Sliced
1 Capsicum, Sliced
2 Baby Corns, Chopped into thin roundels (Optional)
2 Cups of Shredded Cabbage
1 Carrot Sliced thinly
12 String Beans Chopped
2 tbsp Soya Sauce / Hoisin Sauce
2 tbsp Vinegar
2 tbsp Chili Sauce
¼ tsp Pepper Powder
2 tbsp Oil
Salt to taste
Method:
Boil Noodles in water, keep checking the noodles and remove immediately when done. Add a teaspoon of Oil to the water. Strain Noodles through cold water and set aside.
Heat Oil in a wok / pan and add Onions, Ginger and Garlic and stir fry for 20-30 seconds, add all other Vegetables and stir fry for 3 – 4 minutes. Add Salt and Pepper and stir. Now add boiled Noodles and toss gently. Add Vinegar, Chili sauce and Soya sauce and stir fry for a minute. Add Spring Onions and toss. Remove to a serving dish and serve hot.
