This dish is very popular in North Karnataka. The cucumber that is available there is very ideal to prepare this side dish. I bought the vegetable when I visited Hubli in Feb and here is the recipe.
Time Required: 20 Minutes
Ingredients:
4 North Karnataka Cucumbers
1tbsp Masala Pudi
½ tsp Chili Powder
¼ Cup grated fresh Coconut
1tbsp Grated Jaggery
2tbsp Oil
1tsp Mustard Seeds
Few Curry Leaves
½ tsp Turmeric Powder
Few sprigs of Coriander leaves, chopped finely
Salt to taste
Method:
Chop the Cucumbers with skin into roundels. Heat Oil and add Mustard Seeds, and when they splutter add Turmeric Powder, Curry Leaves and the Cucumber.
Sauté for a minute.
Add Masala Pudi, Chili Powder, Jaggery, Salt and mix well. Add ¼ Cup water and close the vessel and cook on low flame for a minute or two.
Open the lid and mix well. Add Coconut and mix. Remove to a serving bowl.
Serve hot with Indian Bread or plain Rice.
