1 Cup Beans, Cut into ½ “ pieces
½ Cup Peas
½ Cup Carrots, Cut into 1 Cm pieces
1 Cup Ash Pumpkin, Cut into 1” and 2 cm width pieces
½ Cup Suvarna Gadde, Cut into 1” long and 1cm width pieces
1 Cup Tur Dal/Red Gram Split
2tbsp Groundnuts
3tbsp Kootina Pudi
¾ Cup fresh Coconut
1 Lemon sized Tamarind soaked in water
1tbsp Jaggery/Molasses

1tbsp Oil
½ tsp Mustard Seeds
¼ tsp Turmeric Powder
A pinch of Asafoetida
Few Curry Leaves
2 Dry Red Chilies, Broken
Method:
Cook vegetables separately, but ensure that they are not over cooked. Pressure-cook Tur dal and Groundnuts. Remove tur dal and cooked vegetables to a thick-bottomed vessel. Extract Tamarind pulp and add this to the dal mixture. Grind Kootina Pudi and Coconut to a paste and add this to the dal mixture. Add Salt and Asafoetida and let it cook for 5 minutes. If it is too thick add more water and cook.
Heat Oil and add Mustard Seeds and when they splutter add Asafoetida, Turmeric Powder, Curry Leaves and Red Chilies. Add this to the Kootu and mix well and serve hot with Rice, Ghee and Ambode or Sandige/Fryums.
