Sweet pumpkin cooked in a gravy. Perfect with Indian Bread.
Time Required: 20 Minutes
Ingredients:
2 Cups of diced Sihi Kumbalakayi / Pumpkin with or without skin
Salt to taste
For the seasoning:
1tbsp Oil
1/2 tsp Mustard Seeds
Few Curry leaves
1 Red Chili, Broken
A pinch of Hing / Asafoetida
A pinch of Turmeric Powder
For the Masala paste:
1tsp Oil
1/2 Cup grated fresh Coconut
3 – 5 Red Chilies
1″ piece Tamarind
1/4 tsp Methi / Fenugreek Seeds
1tsp Dhania / Coriander Seeds
1tbsp Uddina Bele / Urad Dal / Black Gram Split
Method:
For the Masala:
Heat Oil and fry Red Chilies, Methi, Uddina Bele and Coriander Seeds. Grind with the other ingredients to a paste and keep it aside.
For the Palya:
Steam Pumpkin for 5 minutes. Heat Oil and Mustard Seeds, when they splutter add Turmeric Powder, Hing, Curry Leaves, and Red Chili. Add the Masala paste and stir. Add the steamed Pumpkin and Salt and mix well.
Add half cup water and cook for few seconds.
Remove to a serving dish and serve with plain Rice or Indian Bread.
