Indian bread stuffed with sweet corn and cheese.
Time Required: 30 Minutes
Ingredients:
Oil for roasting
For Filling:
½ Cup Grated Mozzarella Cheese
1 Cup Sweet Corn kernels
1 Big Red Chili
½ Capsicum, Chopped finely
Black Salt to taste
For Covering:
2 Cups Wheat flour
Method:
For Covering:
Mix flour with water and knead into a dough. Ensure that the dough is neither too soft nor too hard. Divide into balls and keep aside.
For Filling:
Coarsely grind the Corn kernels in the grinder. Mix all the ingredients in a mixing bowl.
For Paratha:
Roll out each ball on a floured surface into a thin concentric circle. Place the cheese-corn mixture on one half of the circle.
Close the paratha with the other half and press the edges firmly.
Lightly roll the paratha with a rolling pin into an oval shape. Roast both sides on a griddle and drizzle Oil over the paratha while roasting. Serve hot with butter, curds / raitha and pickle.
