Bhelpuri is a sweet, spicy and tangy snack prepared using puffed Rice.
Cuisine: North Indian
Time Required: 30 Minutes
Ingredients:
8 Cups Puffed Rice/Churmur/Kadalepuri
6 small flat Papdi/Crispies
1/2 Cup Nylon Sev/Crispies in the shape of broken vermicilli
1 tsp Jeera/Cumin Seeds, Roasted and Powdered
1/2 tsp Black Salt/Kala Namak
1/2 tsp Red Chili Powder
1 tsp Saunf/Aniseed, Crushed or Powdered
3 tbsp Sweet Chutney
1.5 tsp Green Chili Chutney
1 tsp Garlic Chutney
1/2 Cup Cut and Boiled Potatoes
1 Onion, Chopped finely
1 Tomato, Chopped finely
1 tbsp Coriander Leaves
Lemon Juice (Optional)
Salt to taste
For the Seasoning:
1 tbsp Oil
1/2 tsp Mustard Seeds
1/2 tsp Turmeric Powder
For Garnishing:
Few Cucumber roundels
1/2 Cup Nylon Sev/Savories in the shape of broken vermicelli
1 tbsp Coriander Leaves
Method:
Heat Oil and add the Mustard Seeds, when they splutter, add the Turmeric Powder. Remove from heat. When cool, add this to the puffed Rice and mix well. Add all the other ingredients and quickly mix it well using a flat spatula.
For Serving:
Pile two big spoonful of the mixture on a serving plate. Sprinkle lots of Sev and Coriander leaves over it. Serve with Cucumber.

Do we use mysore puri [ puri with cracks in between] or our bengaluru puri[ puri with soft texture] for this purpose?
