Winter is here and soups are a great way to keep you warm. Carrot and Ginger Soup is mild and complete meal when served with bread toast or Garlic bread.
Time required: 35 minutes
Ingredients:
6 Carrots, Peeled and diced
2 Onions Diced
2 tbsp Fresh Ginger, Grated
3 tbsp Butter
6 Pods Garlic, Minced
1 Cup Celery, Chopped
4 Cups of Vegetable Stock
1 tsp Coriander powder
1 tsp Dry Ginger powder
1tbsp Sugar or Honey
Salt and Pepper to taste
Method:
Melt Butter in a thick bottomed pan. Add Garlic and Onion and sauté for a minute.
Next add Celery, Carrot, and Ginger and stir fry for 2 to 3 minutes.
Add Vegetable stock and let the vegetables cook until tender. Add more stock or water if needed.
Add the rest of the ingredients and mix. Grind everything together in a blender.
Remove to a pan and heat. Balance the taste with Salt and Pepper and serve hot Carrot and Ginger Soup.
