Ugadi festival is the time when the kitchen is filled with the aroma of Mavinakayi Chitranna, Kosambari, Payasa, Ambode, Palya, and of course the Holige (Habbada Adige). Dharwad Peda Holige is a bread stuffed with Dharwad Peda.
Time Required: 30 Minutes

Ingredients:
7 – 8 Dharwad Peda
A pinch of Salt
¾ Cup Chiroti Rawa / Fine Semolina
¾ Cup Maida / Refined Flour
1tbsp Ghee / Clarified Butter
Method:
For Stuffing:
Crumble the Peda and add ½ tbsp Ghee. Knead to a soft dough, a teaspoon of milk can also be used.
For the outer layer:
In a mixing bowl, add Rawa and Maida, mix well. Add water to make a soft dough. Leave it aside for an hour.
For making Holige:
Divide the rawa-maida and Peda dough into small balls.
Press a rawa-maida dough ball lightly to make a depression. Keep a Peda ball over it.
Cover the Peda ball with another rawa-maida dough ball.
Close the Peda ball with the rawa-maida dough, by pressing together the edges of the rawa-maida dough.
Roll gently into a concentric circle.
Roast Peda Holige on both sides and remove.
Serve Peda Holige with more Ghee.
