Badanekayi Gojju is a sweet and tangy dish prepared using Brinjal/Egg Plant.

Ingredients:
¼ Kg Blue Birnjal/Egg Plant
7 – 8 Green Chili according to taste
1 small Lemon size Tamarind, Soak
1 small Lemon size Jaggery
Few Coriander Leaves
½ tsp Turmeric Powder
Salt to taste
For the seasoning:
1tbsp Oil
½ tsp Mustard Seeds
A pinch of Asafoetida or 2 Onions, Chopped finely
Method:
Chop Brinjal into 1” pieces and soak in water for 10 minutes. Boil the pieces in 1 or 2 cups of water and keep aside. Another option is to burn the Brinjal whole on direct flame or in the oven. Remove and let it cool. Peel the Brinjal and use the pulp for preparing the dish.
Prepare Tamarind pulp and add ¾ Cup water to it. To the pulp add Turmeric Powder, Jaggery and boil it. Now, add Brinjal and mash it in the mixture. Let it cook for a minute or two, now add Green Chilies to the mixture and stir. Remove to a serving dish.
Heat Oil, add Mustard Seeds and when they splutter, add Asafoetida/Onion. Pour this over the Brinjal Gojju and mix well. Serve Badanekayi Gojju with Rice.
