Thoran is a Kerala style side dish prepared using Cabbage or Beans.
Time Required: 25 Minutes
Serves: 4
Ingredients:
500gms Cabbage or French Beans, Chopped finely
1 Onion Chopped finely
2 Cloved Garlic
1tsp Chopped Ginger
6 Green Chilies
1tbsp Coconut Oil
½tsp Mustard seeds
1tsp Urad Dal/Blackgram dal split
4 Red Chilies, Broken
1 Cup Fresh Coconut, Grated
¼tsp Turmeric powder
¼tsp Cumin Seeds
Few Curry leaves
Salt to taste
Method:
Coarsely grind Coconut, Ginger, Cumin seeds, Green Chilies, Curry leaves and Garlic. Heat Oil in a kadai/pan and add Urad Dal and Mustard seeds, when the Mustard seeds starts to splutter and the Urad Dal turns pink, add Turmeric, Red Chilies and add Onion and saute for a minute, now add the crushed ingredients and fry for another minute. Add Cabbage, Salt and 2 Cups of water and mix well. Close the kadai and cook until all the moisture evaporates. Serve with Rice or Phulka.
Generally Kerala style Thoran will be having Jeera as one of the ingredients. Fry Urd dal in one spoon of coconut oil and sprinkle it in the thoran. The crispy urd dal gives a different taste. Even with out this thoran is good. Main masalas in thoran are Chilli powder, Garlic and Jeera. These are mixed with Coconut gratings with salt. This is the common mix for Thoran.
