South Indian Potato Masala is a side dish that goes very well with Poori or Chapathi. You can also serve this with Dosa instead of the dry potato side dish.

Ingredients:
4 Potatoes, Boiled, Mashed, and Peeled
1 Onion, Chopped finely
3 Green Chilies, Slit
Few Curry leaves
1 or 2 tbsp Oil
1 tsp Mustard Seeds
1/2 tsp Turmeric Powder
2 tbsp Chopped Coriander leaves
Salt to taste
Method:
Heat Oil. Add Mustard seeds and when they splutter add Turmeric Powder, Curry leaves, Green Chilies, and Onion. Saute until the Onions are translucent.
Add Potatoes, Salt, and 1 Cup water. Mix and let it cook for 2 to 3 minutes. If it is too thick add another half cup water and cook for another minute.
Remove to a serving dish and garnish with Coriander leaves.
Serve hot with Poori, Phulka, Chapathi, or Dosa.
