Kancheepuram is a temple town in Tamil Nadu. There is a Idli called Kancheepuram / Kanjeevaram Idli and here is a recipe for Kancheepuram Dosa.
Time Required: 20 Minutes + Soaking Time + Fermenting Time
Ingredients:
2 cups Rice
½ cup Urad Dal / Black Gram Split
1tbsp Kadalebele / Channa Dal / Bengal Gram
1tsp Crushed Peppercorns
½ tsp Turmeric Powder
½ tsp Methi / Fenugreek Seeds
A pinch of Hing / Asafoetida
Oil for roasting
Salt to taste
Method:
Soak Rice, Urad Dal and Methi for 5 hours. Soak Kadalebele separately. Grind Rice, Urad Dal and Methi to a batter. Add Pepper, Kadalebele, Turmeric Powder and Hing and mix together and leave it aside to ferment for 6 to 8 hours.
Add Salt and mix well. Heat griddle and pour a ladleful of batter and spread it to a thick concentric circle. Sprinkle Oil and roast on both sides.
Serve hot with Butter, Pickle or Chutney.
Droolworthy dosa, never prepared yet at home.
