Rawa Idli are steamed cakes prepared using Semolina. An ideal and filling breakfast. This was first prepared by Mavalli Tiffin Room (MTR) for the soldiers serving in harsh climates. It became an instant hit among the civilians and we continue to relish this dish.

Ingredients:
4 Cups Rawa/Semolina
4 Cups Curds
1 Cup Coriander Leaves, Chopped finely
A pinch of cooking Soda
1tbsp Oil
1tsp Mustard Seeds
Few Curry Leaves
1tbsp Kadalebele/Bengal Gram
Salt to taste
Method:
Heat Oil and add Mustard Seeds and Bengal Gram. When Mustard seeds starts to splutter and Bengal Gram turns pink add Curry leaves. Remove from heat and keep aside. In a mixing bowl mix Rawa, Curds, Coriander leaves, Salt and Soda.
Add the seasoning and mix well. If the mixture is very thick add ½ cup water.
Grease Idli trays and pour the mixture into the trays. While you are doing this heat the water in the cooker. This will ensure that the Idlis are fluffy. Steam for 10 minutes.
Serve hot Rawa Idli with Ghee/clarified Butter, Sagu/Kurma and Chutney.

I just added 1 spoon of sugar to remove the saurness of curd…
