This Grape concentrate can be prepared and stored for many days. I picked up a basket of juicy black grapes on the way to Ghati Subramanya near Bangalore and mom was only too happy to make this lip smacking thirst quenching Juice! perfect for a summer evening…
Time Required: 1 Hour
Ingredients:
2½ to 3 Kgs of Grapes
1 ½ Kg Sugar
20 – 25 gms Citric Acid
700mg of Sodium Benzoate (Optional)
Method:
Remove the stems and discard under ripened fruits. Wash grapes with water and drain them out completely. Remove to a big vessel and add a cup of water and cook until the fruits become soft. Remove from heat and crush the fruits. Strain out the pulpy mass.
Mix Sugar and Citric Acid. After the Sugar dissolves and strain again. Remove to sterilized bottles and store Grape Juice concentrate in refrigerator.
To Serve: Dilute the syrup with 6 times its volume of chilled water, a pinch of Salt and serve Grape Juice.
Note: Add Sodium Benzoate along with Sugar and Citric Acid and mix well. Add this only if you want to store it for months without refrigeration.
