Indian bread stuffed with Potatoes and spices. I learnt to make Masaledar Alu Paratha from my Mami / Aunt who passed away two weeks back. This post is dedicated to her memory and her culinary skills.
Time Required: 40 Minutes
Ingredients:
2 Cups Wheat Flour
Oil / Butter for roasting
4 Alu / Potatoes
2tbsp Oil
Salt to taste
For the Masala:
1 Onion
3 Garlic Pods
2 Green Chilies
1-Cup Coriander Leaves
1” Ginger piece
Method:
Boil Potatoes. Peel and grate them. Mix flour with Salt and bind to a dough. The dough should be neither too soft nor too tough. Divide into balls.
Grind the ingredients for the masala to a paste. Heat Oil in a pan. Add the masala paste and stir-fry until the moisture evaporates. Add the grated Alu, Salt and mix well. Divide into small balls (smaller than the dough ball).
Flatten each dough ball and stuff with a ball of Alu mixture and close it.
Roll each ball on a floured surface into a concentric circle and roast on both sides with Oil.
Serve hot Masaledar Alu Paratha with Raitha, Side Dish, Dal, Chutney, Salad or Pickle.
