Varalu Chitranna is Rice prepared with a masala, which is made using the stone mortar known as Varalu in Kannada.

Time Required: 30 Minutes
Ingredients:
2 Bowls Cooked Rice
1 Cup Grated fresh Coconut
Few pieces of Tamarind, Soaked in water
A small piece of Jaggery
Few Curry Leaves
Few sprigs of Coriander leaves
4 to 5 Green Chilies
A big piece of Hing / Asafoetida
1/4 tsp Cumin Seeds
6 – 7 Methi / Fenugreek Seeds
Salt to taste
For the seasoning:
2 – 3 tbsp Oil
2 – 3 Red Chilies, Broken
1 tsp Kadalebele / Channa Dal / Bengal Gram
1 tsp Uddinabele / Urad Dal / Black Gram Split
1 tsp Mustard Seeds
1 – 2 tbsp Groundnuts
1/2 tsp Turmeric Powder
Few Curry leaves
For Garnishing:
Few sprigs Coriander leaves, Chopped finely
Method:
Combine together Coconut, Tamarind, Curry leaves, Hing, Coriander leaves, Green Chilies, Cumin Seeds, Methi, and Jaggery. Grind to a paste.
Heat Oil in a pan. Add Kadalebele, Uddinabele, Groundnuts and fry for 10 seconds, next add Mustard Seeds and when they splutter, add Turmeric Powder, and Curry leaves.
Add the Coconut paste to the seasoning and stir fry for two to three minutes.
Add cooked Rice and Salt to the mixture and mix well.
Remove Varalu Chitranna to a serving dish.
Serve hot with Kosambari.
