This tasty salad cum snack is prepared in Maharashtra households.
Time Required: 20 Minutes
Ingredients:
1 Cup Soaked Poha / Beaten Rice
1 Cucumber, Chopped finely
1 Tomato or few Cherry tomatoes (halved), Chopped finely
1 Onion, Chopped finely
1 Green Chili, Chopped finely
1 small Green Mango, Chopped finely (Optional)
1tbsp Roasted Peanuts
Few Sprigs of Coriander leaves, Chopped finely
Few Lettuce leaves, torn
Few Mint leaves, Torn
For the dressing:
2tbsp Tamarind Pulp
2tbsp Olive Oil
1tsp Sugar
Chili flakes to taste
Salt to taste
For garnishing:
2tbsp Yellow Sev
Few broken Papdi / flat crisp bread
2tbsp Pomegranate Seeds
Method:
Whisk the ingredients for the dressing in a bowl and keep aside.
Mix the vegetables, leaves, and poha in a salad bowl. Add the dressing and gently toss. Serve garnished with Sev, Pomegranate, and Papdi.
