Potatoes cooked in North Indian style with Coriander leaves, seeds and powder.
Time Required: 40 Minutes
Ingredients:
4 Alu / Potatoes
1 Cup Coriander leaves
1tbsp Pista
6 Green Chilies
Oil for deep frying
1tbsp Oil
1tsp Saunf / Aniseeds
3 whole Elaichi / Cardamom
2 Cinnamon pieces
1tsp Sugar
1tsp Garlic Paste
1tbsp Coriander Powder
1tsp Aamchur Powder / Dry Mango Powder
Salt to taste
Method:
Peel and chop Potatoes into cubes. Deep fry the cubes until golden brown. Remove on a kitchen towel.
Grind Coriander leaves, Pista and Green Chilies to a paste.
Heat Oil and add Garlic paste and sauté for few seconds. Add Aniseeds, Cardamom, Cinnamon and the ground paste and stir fry for a minute. Add Coriander Powder, Salt, Sugar and stir. Add the deep fried Potatoes and mix well.
Serve hot with Indian Bread.
