A side dish prepared using Potatoes and Pointed gourd.
Time Required: 25 Minutes
Ingredients:
2 Potatoes, Peeled and Diced
4 Parwal / Pointed Gourd
2 Tomatoes, Chopped finely
1 Onion, Sliced
4 – 6 Peppercorns
1” length 2 Cinnamon
2 – 3 Lavang / Cloves
1 Elaichi / Cardamom
½ tsp Garam Masala or Tandoori Masala Powder
1tsp Jeera / Cumin Powder
2tsp Chili Powder
1tsp Coriander Powder
4tbsp Oil
Salt to taste
Method:
Peel the Parwals as shown in the picture above. Cut them into roundels. Heat 2tbsp Oil and add Parwal and Alu and stir fry them for 3 to 4 minutes. Remove and keep aside.
Heat 2tbsp Oil and add Peppercorns, Cinnamon, Cloves, Cardamom and Onions and sauté for a minute. Next add Tomatoes and stir for two minutes. Add Jeera, Chili and Coriander Powder and stir. Add 1 cup of water and Salt. Add Garam Masala or Tandoori Masala Powder and mix well. Add the fried Parwal and Alu and mix. Remove to a serving bowl and serve hot with Roti, Paratha or Rice.
