When there are no vegetables at home and you find Apples not eaten, you can make a quick gojju using the Apple. If the Apple is Granny Smith, the taste is better.
Time required: 20 minutes
Ingredients:
1 Cup Apple pieces
1 Green Chili, Slit
1 Lemon sized Tamarind soaked in water (you can skip if you are using Granny Smith/Green Apple)
2 tbsp Gojjina pudi (Gojju masala powder)
½ Cup Fresh Coconut, Grated
2 tsp Oil
½ tsp Mustard Seeds
A pinch of Turmeric Powder
Few Curry leaves
½ Cup Jaggery
Salt to taste
Method:
Extract tamarind juice and keep aside. Grind Coconut and Gojjina pudi to a paste.
Add water if needed. Heat Oil in a kadai/pan and add Mustard Seeds and when they start to splutter, add Turmeric powder, Green Chili, and Curry leaves.
Next add the Apple pieces.
Stir-fry the Apple for a minute or two. Add half cup water and let it cook for a minute or two.
Add Tamarind pulp, Masala paste, Salt and Jaggery and mix well.
If the consistency is too thick, add half-cup water. Let it cook for 5 minutes. Remove Apple Gojju to a serving bowl.
Serve with Phulka, Huggi(Pongal), Dosa or plain Rice.
