During winter, the Avarekayi (Surti Papdi, Lilva Beans) rules the kitchen with it being added to almost all the savoury dishes. This healthy recipe includes green leafy vegetables to be served with either Rice-Rasam or Indian Bread.
Ingredients:
1 Cup Boiled Avarekayi
3 to 4 Cups, Assorted green leaves, chopped finely
1 big Onion, chopped
2 – 6 Green/Red chilies, slit
1 tsp Jaggery
2tbsp Oil
1 tsp Kadalebele/split Chikpea
1 tsp Uddinabele/split Black Gram
1/2 tsp Mustard Seeds
1/2 tsp Turmeric Powder
1/2 cup Grated fresh Coconut
Few Curry leaves
Salt to taste
Method:
Heat Oil in a kadai / pan and add Kadalebele, Uddinabele and when they turn pink add Mustard Seeds and when Mustard splutters add Turmeric Powder, Green Chilies, Curry leaves and stir.
Add Onion and stir for two minutes.
Add leafy vegetables and stir. Add Salt, Jaggery and a cup of water. Close the kadai and cook until the vegetables are soft.
Add Avarekalu and Coconut and mix well.
Remove Avarekalu Soppina Palya to a serving dish and serve hot with either Rice or Indian Bread.
