A delicious side dish with gravy prepared using Flat Winter Beans. This can be also be prepared with any type of sprouted beans that is available.
Time Required: 40 Minutes
Ingredients:
2 Cups Avarekayi / Flat Winter beans or Sprouted Moong / Green Gram
1 big or 2 small Onions, Chopped
1tbsp Grated Jaggery
1tsp Mustard Seeds
A pinch of Turmeric Powder
1 Sprig Curry leaves
2 – 3tbsp Oil
Salt to taste
For the Masala:
¾ Cup Fresh Grated Coconut
1tsp Somph / Aniseed
1” piece Dalchini / Cinnamon
1 Clove
6 Green Chilies or Red Chilies
4 – 6 Pods of Garlic
4 Sprigs of Coriander leaves
1tbsp Poppy Seeds
Method:
Grind all the ingredients for the masala to a paste using little water and keep it aside. Pressure cook Avarekayi. Heat Oil in a thick-bottomed pan, add Mustard Seeds and when they splutter, add Curry leaves, Turmeric Powder and Onions. Sauté until the onions turn translucent. Add the Masala and stir for two minutes. Add cooked Avarekayi, Salt, Jaggery and 1 Cup of water and mix well. If you want thinner gravy add more water and let it cook for 2 to 3 minutes. Keep stirring. Remove to a serving dish and serve with your choice of Indian Bread.
