Ishtew is a mixed vegetable stew from the state of Kerala. Vegetables are simmered in coconut milk and this is served with a crepe/pancake called Appam.

Ingredients:
1-Cup Cauliflower
½ Cup Carrots
½ Cup Beans
½ Cup Peas
½ Cup Potatoes
1” Ginger
4 Green Chilies
1 tsp Garam Masala
Few Curry leaves
Salt to taste
1 Cup thick Coconut Milk
1 Cup thin Coconut Milk
1 Onion chopped
1tbsp Coconut Oil or any Oil of your choice
Method:
Chop all the vegetables into pieces into any desired shapes and size. Steam Cauliflower, Carrots, Beans, Peas and Potatoes and keep it aside. Heat Oil and add Onions and sauté for a minute, next add Ginger, Curry leaves and Chilies and stir for few seconds.
Now add the thick Coconut Milk and stir.
Add the thin Coconut Milk, steamed Vegetables, Garam Masala and Salt. Stir and let it come to a boil.
Remove to a serving dish.
Serve hot Ishtew with Appams and Dosa.
