Jeegujje is known as Bread fruit and is widely cultivated and consumed in Karnataka coastal regions. This stir-fry is prepared using this unusual vegetable.
Time Required: 25 minutes
Ingredients:
1 Breadfruit
2tbsp Oil
1 tsp Uddinabele / Black Gram split
1tsp Mustard seeds
Few Curry leaves
2 Red Chilies, Broken
¼ tsp Turmeric Powder
1tsp Chili Powder
A pinch of Hing / Asafoetida
¼ Cup Grated fresh Coconut
2 to 3 Sprigs Coriander leaves, Chopped finely
Little Jaggery
Salt to taste
Method:
Apply some Oil on your hands and the knife and peel the Bread Fruit. Chop into small pieces. As you chop, immerse the Bread Fruit pieces in a bowl of water.
Heat Oil and add Mustard Seeds and Uddinabele. When the Mustard seeds splutter and the Uddinabele turns pink, add Curry leaves, Green Chilies, Turmeric Powder and Hing.
Add Bread Fruit, Jaggery, Chili Powder, and Salt and stir. Add half cup of water and mix well. Close the vessel and cook until the Bread Fruit is soft.
Add Coconut and mix well. Garnish with Coriander leaves and serve hot with Rice or Chapathi.
