Shakarkandi Fry is a dry side dish prepared using Sweet Potatoes. Children will love this as it tastes like Chaat!

Ingredients:
3 – 4 Shakkarkandi / Sweet Potatoes / Sihi Genasu
3 – 4 tbsp Oil
1 tsp Mustard Seeds
1 tsp Jeera / Cumin Seeds
1 tsp Kala Namak / Black Salt
1 – 2 tsp Red Chili Powder
1/2 tsp Turmeric Powder
1 tsp Garam Masala Powder
2 – 3 Red Chilies, Broken
Few Curry leaves
Salt to taste
Method:
Wash and peel the Sweet Potatoes. Dice them and keep aside. Heat Oil and add Mustard Seeds, when they splutter, add Jeera, Turmeric Powder, Red Chilies, and Curry leaves.
Add Sweet Potato and stir fry for 3 – 5 minutes. Check if the Sweet Potato is cooked. You can close the vessel if required.
Add Chili Powder, Kala Namak, Garam Masala, and Salt and stir.
Cook for another two minutes. Remove to a serving dish and serve hot with your choice of Indian bread or Rice and Dal.
