Sookha Aloo is a side dish prepared using Potatoes and spices. The potatoes are crisp and are coated with spices, which you can snack on or can be served as a accompaniment.

Serves: 4
Ingredients:
2 Big Potatoes
2tbsp Oil
½ tsp Mustard Seeds
½ tsp Jeera / Cumin Seeds
½ tsp Methi / Fenugreek Seeds
½ tsp Turmeric Powder
2 – 3 Dry Red Chilies
1½ tsp Chili Powder
2 tsp Jeera/Cumin Powder
2 tsp Dhania/Coriander Powder
1 tsp Aamchur/Dry Mango Powder or Juice of half Lemon
Salt to taste
Method:
Peel Potatoes and cut into small pieces. Heat Oil in a kadai/pan and add Mustard Seeds, Jeera, Dry Chilies, and Methi. When the Mustard splutters, add Turmeric powder.
Add Potatoes and stir fry for a minute.
Close the lid and cook. Open the lid stir and continue to do this until the Potatoes turn soft.
Now add Jeera, Dhania, and Aamchur powder and mix well. Add Chili powder and salt and stir gently.
If you are using Lemon Juice, add at this stage and stir.
Remove to a serving dish. Garnish with Coriander leaves and serve Sookha Aloo with Phulka or plain Rice or Rice and Dal/Tovve.
