A side dish prepared using Yam.
Time Required: 25 Minutes
Ingredients:
2 Cups Suvarnagadde / Yam pieces
1 Lemon sized Tamarind soaked in water
2tbsp Oil
1tsp Bengal Gram
1tsp Urad Dal
1tsp Mustard Seeds
½ tsp Turmeric Powder
Few Curry Leaves
2 – 3tbsp Grated Coconut
3 Green Chilies slit
Salt to taste
Method:
Extract pulp from the Tamarind. Dilute it by adding two cups water. Soak the Yam pieces in the Tamarind water for 15 minutes. This is done, because Yam might induce itching of the mouth.
Heat Oil in a pan, add Bengal Gram, Urad Dal and when they turn pink, add Mustard Seeds and when they splutter add Turmeric Powder, Curry leaves, Green Chilies and stir. Add Yam and Salt. Stir continuously for 3 minutes. Close the pan and lower the heat. After 2 minutes, open the lid and stir again for a minute or two. Close the pan. Continue to do this until the pieces are cooked.
If the above process is tedious for you, then add a cup of water and close the vessel and cook until the vegetable is done. Add Coconut and mix. Serve with Rice and Saaru / Rasam or Chapathi / Phulka.
