This dish is from the state of Maharashtra. Kothimbir Vadi is prepared using Coriander leaves and Gram Flour.

Ingredients:
2 Cups Coriander leaves
1½ Cups Besan / Gram flour
½ cup Rice flour
½ cup Chiroti Rawa / Fine Semolina
¼ tsp Cooking Soda
3 – 4 Chopped Green Chilies
2 – 4tbsp Roasted Groundnuts, peeled and crushed
¼ tsp Hing / Asafoetida
2tsp Coriander Powder
1tsp Turmeric Powder
1tsp Chili Powder
½ tsp Cooking Soda
Oil for deep frying
Salt to taste
Method:
Mix all the ingredients except for Oil together with water to idli batter consistency. Grease trays and pour the mixture into them.
Steam for 10 minutes. Remove from trays and cut into desired shape.
Deep fry the pieces and serve with koshimbir, chutney or sauce.
