Small round and flat deep-fried bread. Papdi is used in preparation of many varieties of Chaats like Papdi Chaat, Masala Puri, Bhel Puri, and so on.
Time Required: 20 Minutes
Ingredients:
1 Cup Maida/Refined Flour
3tbsp Ghee / Clarified Butter
1tsp Ajwain/Carom Seeds
Oil for deep frying
Salt to taste
Method:
Rub Ghee into the Maida. Add Ajwain, Salt, and little water to prepare a s stiff dough. Cover with a wet cloth and leave aside for 30 minutes. Do not knead too much. Divide into tiny balls and roll out on a floured surface into 1″ diameter roundels, make tiny cuts in between to avoid puffing. Heat Oil in a frying pan and deep fry on low heat until done.
Papdi is used to prepare various chat items like Bhel Puri, Sev Puri, Papdi Chat and various other chat items in combination with green chutney, sweet chutney, potatoes, murmura / kadalepuri, sev and so on.
Vegetables like Tomatoes, Onions, Cucumber add a crunch to the chat.
